Lemon pie

One of the favorite sweets of our guests is the lemon pie.

The recipe is from the book “The complete book of desserts”.

Ingredients

• grated bark and 1 large lemon juice
• 200 g of sugar
• 25 g butter (2 tablespoons)
• 45 grams of corn starch (3 tablespoons)
• 3 eggs separated by egg yolks
• pinch of salt
• 250 ml of water

For crumbly dough

• 120 g of flour
• 1/2 teaspoon of salt (can be reduced to 1 pinch)
• 80 g of cold butter, diced
• 2 tablespoons of ice water
